Certain species of plant, while found in various regions worldwide, exhibit a unique chemical composition tailored to specific locations. This is evident in the Myrtaceae plant, from which African honey bees harvest casuarine-rich nectar, contributing to the distinctive honey chemistry of our honey collected from these regions.
We have attempted to cultivate the same plant in various locations but have yet to successfully harvest honey that is rich in casuarine and other desirable iminosugars, even when these compounds are detected in the plant itself. Only honey sourced from specific African regions meets our requirements, and due to variability, only certain batches qualify as casuarine-rich honey suitable for our honey chemistry needs.
Our understanding is that the casuarine-rich honey, derived from specific plant species prevalent in the African flora, is a dominant feature of the regions where this unique honey is harvested. It's not just about the species but also the location. Efforts to cultivate these plants in other areas and greenhouses have, so far, failed to produce casuarine-rich honey, highlighting the importance of honey chemistry in determining its quality.
Bees do not simply gather nectar and it miraculously becomes honey when they store it in their hives. Nectar is processed by bees to make honey, a process that involves enzymic conversions, concentration, and dehydration before it becomes honey and is stored in the cells of the hive.
